I am not sure how you stretched out the plate, very nice plate BTW, but if you place the curser over the middle of the "resizer" arrows and move it either right or left it will make smaller or larger your object keeping its proportions. I hope this makes sense. It looks like you tried to make it larger by moving the X and Z arrows which could make it off center.
