Paths are used in animation to allows for smoother movement. You can have a camera follow a path or conform an object to a path and have IT follow the path as you progress through your frames. They are not actual objects in that they don't render. The other use for paths in doing a multi-replicate of an object. If you conform the original object to the path the replications will follow the path in effect giving you a string of objects.
