You probably just need to add a few more keyframes in between. I know my Bryce 4 gets kinda stupid when it comes to rotations that are >=180. Sometimes you need to bump things over a bit by adding a "tween" keyframe to keep objects on track when they're parented too. You're right though, Bryce doesn't work exactly the way it should when animating.
