Misha, I would say simplification rather than approximation. Keep in mind that the CCD sensors only pick up what it sees as light and converts that to an electrical impulse, it actually does no conversion at all. All conversion is done post process. So technically, the image is captured in color. Converting that electrical impulse to represent color, RGB or B&W is done outside the CCD sensor.
