No, it's not just you. Mimic is designed with a human figure's joint structure in mind, so the pose's rotation values for the head might not be correct for certain animal figures.
The PC version of Mimic allows you to disable head movement; I'm not sure if the Mac version has the same option. Other than that, you could simply adjust the head's xRotate (Bend), yRotate (SideSide), and zRotate (Twist) keyframes in the animation graph after applying the Mimic pose to have the figure look in the direction you wish.
