Fortunately (or unfortunately) you don't need eyeballs to analyze a data stream, just a few hundred million $ worth of supercomputers. I imagine they probably use both techniques. I don't know about the galleries but I downloaded the image from my meaasge, ran it through the program and the text is still there.
