A classic texture tutorial is the one from cake one! I prefer using photos and then paint them over where needed, I don't always make the symmetric trick because I think this way textures are more natural... As for the body textures most times I make them by hand using dodge and burn in photoshop,I find it very difficult to match various body photos...
