Hey Morph, it's easy, in older versions there was a "text dialog box" that you typed into... now you can just select the "TYPE tool" click where ever you want the copy to go, and start typing. It will automatically create a new layer leaving your text editable...

here's an example using a simple word ballon shape (1) and some gag copy (2)

as you can see, each is on its own layer allowing you to move them around...
