That depends on what type of picture you're making and what atmosphere you want. Short focal lengths (really anything under 40) give a fisheye effect. Large focal lengths (over 100) can look strangely skewed. I generally pick about 75 for a close-up head-shot and 50-60ish for a mid-range shot. Playing with focal lengths can give some weird and wonderful effects, witness the attached, which was rendered with a focal length of 15.
