1.1 here you can find loads of tutorials here on rosity and other siteds, just hit the search engine here.
1.2 cutting and pasting from photos:
as you can see in the attached image it is pretty easy, just cut the pieces you want on the UV map. and place them on the corresponding parts of the UV map. but be aware that cutted parts matches the lines from the UV map otherwise your texture will look awful when rendered in Poser or another 3D program. If you have pasted all the parts like nose; eyes; brows and lips you can clone the rest from the photos to fill in the blanks. Or you can be precise and cut the rest of the photo and paste small parts on the UV map to fill in the blanks.
You can do this all in any Photo program that uses cutting, pasting and cloning, like Adobe Photo shop or Jasc Paintshop pro etc

Rock PS. the more photos you have the better it's best to at least have a front and a side photo of the face
