DVD is a whole can of worms, trust me I am working on my own movie and have researched this thouroghly.Once you have edited your movie (I use Ulead Media studio Directors cut) But there are any number of editors available, that will work.
You will need an MPEG 2 encoder. I use TMPGEnc, It supports a very important flag in the MPEG 2 standard That can tell a DVD player to do it's own 3:2 pulldown on the fly which means YOU DO NOT have to interlace your video if this flag is set. This will save TONS of space on your disc for higher quality video, AND It will alow for PROGRESSIVE SCAN play back on a progressive scan TV.
I'm also not sure which DVD authoring software will allow you to author a progressive discs, so you will want to research that, to see how much you want to spend Versus the features you need. I use TMPGEnc DVD author which supports all the features of the encoder. I also got their 2.0 (Stereo) AC3 encoder. (Again to save disc space and Maximise compatibilitty with DVD players.) TMPGEnc DVD author lacks a few Bells and Whistles but It is very inexpensive, and it's the easiest to use authoring software I have tried. It also was the most compatible with multiple DVD players. JUST DON'T USE THE BUILT IN BURNING SOFTWARE, Use something like Nero, especially if you want to get your DVD replicated commercially.
Now if you don't have any of this software, you might want to look into Sony VEGAS+DVD, It's a top notch Video editing software with capable DVD authoring and best of all the ability to mix and encode 5.1 AC3! I couldn't justify the cost or come to grips with the editor's interface, but if you are not used to anything else already you might want to go that route. It is MUCH more expensive than the software I use though.
Oh and if you want to make your DVD widescreen (It's the way of the future man) Render at 853x480. The DVD player will automatically letter box it on a 4:3 TV, But it will fill a 16x9 TV. :D
BTW I have rendered test discs, so all this info is accurate. The 3:2 pulldown even worked with a Playstation 2.
