to remove the texture, you'll click on the texture name, and click "None". That will remove the texture from the figure. There are some really good skin shaders in the Misc. Free stuff area that are specifically for DAZ|Studio, as well ;). To make a "shader", basically, you use the settings in the "Surface" Palette to colour the figure. You'll want to use the "Advanced" tab, as that gives you many more options. I have a mini-tutorial in the ODF Magazine, Ephimeris, on shaders, but they're not skin shaders. It follows a similar principal, and is basically intended to get the reader experimenting, rather than a step by step to get a certain look. http://ephemeris.oddditty.biz/December/13.htm
