it's a difficult topic to cover. for example, I've never seen them put a ping-pong-ball suit on a donkey, put the donkey on a treadmill, then make it walk while recording it with a set of infra-red cams. but at least they've done that with humans, hence one can buy bvh files of humans for almost any pg-13-rated motion.
