To uninstall IE7 just use the Add/Remove programs in the control panel and it will default back to IE6.  However, IE7 is out of beta and I've had no problems with it.  Of course, I have custom settings for all the sites I go to so when I pre-ordered P7 I didn't have any problems with the e-F site.
