Click on th efigures hip, and then click on 'Window' in the menu bar. Choose 'Joint Parameters' in the drop down menu. When the Joint Parameters dialogue box opens, click on 'Zero Figure'. As for posing the figure, you need to turn off the IK's (Inverse Kinesis) in the arms and feet before moving them.
