A "classical trick"  for that is to use a terrain (mountain), make the material transparent - air for example and then do the fish/bird ecosystem on that. Then you have the animals positioned in space without seeing what is under.

Will need maybe a bit tweaking of the fully transparent material to avoid reflections etc, but it is not very difficult.
