You can change the material of the elements of an ecosystem easily. See attached image. In the bottom area of the object browser on the right of Vue screen, you have 4 tabs. The second tab, with 4 little spheres, has the list of all materials. Some of them are ecosystem ones. Just double click on the one you want to change... and change it.
