What above post said. To reiterate, the images used in UV maps are "stretched to fit" in a way. That is, they should maintain the same aspect ratio as the original template. So by chopping off the half with the "extraneous" bits, the image gets stretched to take up the same amount of space. And when it does that, whatever you painted is no longer on-template. Thus wierdness happens.
