I always take that forecast render time with a grain of salt.
If Vue is rendering a particularly complex part of the scene, it assumes the whole scene will be of the same complexity.
As for the pause, I don't do any scenes that take days so I haven't experienced it. From my experience there's little difference in render quality between a 2 hour scene and a 2 day one, just MHO.
