Yup, me too. I never trust the eye rotation dials or the point-at something option, they never seem to get the eye rotations quite right, especially when they are some way off to the side.
I downloaded some freebie V4 eye props from somewhere. They parent to the eyes, and the idea is you select a camera which is positioned where you want the character to be looking, zoom in close (without moving the camera) and line up the centre of each iris with a cross-hair using the rotate dials. Then make them invisible, and switch back to your render camera (if different).
It sounds good in theory, but I haven't tried them yet.
