OS X users may wish to try copernicus for the screencap and visualhub for the conversion.  ffmpegx is sometimes recommended, but is user-hostile compared to visualhub IMVHO.  but whether OS X or the alternatives, is gonna require that somebody do a video tutorial on how to do video tutorials.
