Don't forget it's not just about how many users you have on a machine, but what access those users have.
Should you manage to get a trojan or worm on your PC, it will have a far far easier time causing havoc with UAC turned off. The whole point of UAC is to force you to confirm activities that would require elevated privileges, which such malware usually does. With UAC tuned off they can do whatever they want without ever leting you know a thing.
If you want a quieter UAC, try upgrading to Windows 7. It's just as functional with regards to UAC but much less "in your face" about it.
