Everytime you change, strech, move the mesh the coordenates points in UV will change. So what you need to do is: model the basic mesh first, UV the mesh, model the distortion in mesh, them adjust the UVMap again. This is the only way to do what you want...and is what everyone do too. Do you have some reference??
