Your camera focal length determines your field of view. Your field of view determines how much of the EnvSphere image you see in the render. If you use a narrow FOV, then you must have a VERY large image or it will be blurry. Either use extremely large images (at least 10K by 5K) or make your camera show a wider FOV.
