Jnighthawk, a short while ago I wrote a tutorial that walks you through modeling a gingerbread man, and making it a poseable figure, using Poser with some different freeware programs (anim8or for modeling, UVMapper, and PhiBuilder). The end result is pretty primitive, but it does take you through the basics. The link is above, in case you find it useful.
