We Scots have all manner of wonderful delicacies that are far better to eat while wearing a blindfold the first few times. Haggis is just the best known.
I remember a couple of years back seeing a professional chef being shown how to make traditional Black Pudding on TV. Half way through the process he rushed out of the kitchen of the woman who was demonstrating and threw up in her backyard.
Black pudding is a blend of onions, pork fat, oatmeal, flavourings - and blood (several litres, usually from a pig).
Haggis and Black Pudding are delicious. I've never been able to stand Tripe though. (That's the lining of a cow's stomach for those who don't know.)
