I made a tool that helps a lot for getting light levels right. It's the BBLightMeter. It's a prop you put in the scene and render it - the rendering of the prop reveals if you have too much light (it turns red) or not enough (it turns black). When things are just right, it makes big white circles that slightly overlap.
It has two parts - the inner measures diffuse light and the outer measures specular light.
