Generally because they're afraid of incoming punishment. Dogs (and animals in general) really do not "fake it" when they show fearful behavior, they're genuinely afraid. That's a scared dog in that video.
Well I can tell you that the worst "punishment" our dogs get is being sent outside. No one in this house so much as spanks a dog and they will still show that they know they've been busted if caught getting into the garbage or sleeping on the sofa. Dogs are pretty smart and learn to interact with humans. It's why mine instantly jump off the couch in the mornings when I come into the room and the worst they've gotten for being up there is me telling them to "get down". Just like a kid caught climbing up to get a cooking out of the cookie jar when they know they shouldn't.
