Rape seed is a major industry in Canada, so our margine is largely made from canola oil -- not plastic. LOL. Some of our margarine is made from olive oil.

It's generally no longer hydrogenated. At least, it isn't around here. And it has about 1/10th of the fat of butter.

However, the fat is "fractionated", which is a new method used to take polyunsaturated fat into a room temperature solid.

Whether the new method is completely safe in the long term, however, is still up for debate.

Shortening is generally still hydrogenated, and should probably be avoided like the plague.
