The set has a lot of objects in close proximity. If you set the materials to be very glossy then there will be a lot of reflections and bounced light from the nearby object and noise will show up. This is a set where each and every material needs to be manually adjusted, which is kinda the idea about the challenge. So, you need to tweak the glossiness/polish until, it looks good and produces low noise.

Sounds like my standard procedure for any scene :-) She's already cooking on the fourth adjustment and looking better. Very good info to consider for prop-heavy scenes nonetheless! Much to be learned from Paolo-san.
