I haven't found a headset mic I liked yet, but my buddy Ironman13 says her Logitech Wireless headset records really well :)  It's hard to say though, it's going to be a combination of soundcard and headset/mic.

I got over my soundcard being a bit pants by getting a usb mic, which bypasses the soundcard thing.
