I just don't understand that people that obviously know how to model don't take the time to load one or two reference pics before they start.

Even if you try to make a fantasy item, a few sketches usually help keeping the desired "look". If you start eyeballing, inevitably something will be off in the end and then it's usually too late to correct it.
