Unfortunately there does not seem to be a way for anyone other than a Windows programmer to turn off the automatic update feature in Windows 10.

See below quote from post by ad. @ RDNA (not sure I'm allowed to post the link) about how to stop auto updating:

_Hi, on Windows 10 Home you'll need to uninstall KB3132372 and then run the 'Show or Hide update trouble shooter' that you can obtain from Microsoft. If you just uninstall KB3132372 it will automatically update again each time you remove it. Once you've hidden KB3132372 with the 'Show or Hide update trouble shooter' it won't reinstall until Microsoft release a new version of the patch for Flash.

Here are the instruction for running the 'Show or Hide trouble shooter'

Find the 'Show or Hide update trouble shooter' - which will be download as - wushowhide.diagcab - and double click on it Click the Next - bottom Right. the trouble shooter will search for update - when it's finished searching click the Hide Updates Box. the trouble shooter will display a list of updates. Mouse click on the selection box next to - Security Update for Internet Explorer Flash Player for Windows 10 Version 1511 for x64-based Systems (KB3132372). Click next and the 'Show or Hide update trouble shooter' will hide the update until Microsoft update the patch. Close the trouble shooter. _
