The head is in a secondary menu under chest parts. All the face controls are listed un a sub-menu of the head. I find it easier to keep the hierarchy menu open at all times and use that. But that's me. I have 2 screens, so I have the space to do that.
Ohhhhh, I don't usually use that, but now that you posted the screenshot, I remember it, and yes all the right facing arrows mean there's a secondary list.
