Try changing OpenGL to SreeD or the other way around in Preview.  That will change the behavior of the texture display.  As for the preview export, under the Render Tab, select Preview as your renderer.  That will preserve the Preview window and you can export that image.  The Export feature always relies on the last rendered image in your cache, although you can open the render window and select any previous image for exporting.
