CakeOne has a good tutorial on making a face texture from a picture of yourself (see link). As for the shape, there is a program called Still2Real (not sure of the spelling - search the store here). It is supposed to allow you to alter a Poser head mesh to match the contours from a picture. I believe it costs $50. There may be a demo in freestuff. If you have a 3D modeling program that will let you use a picture as a template in the background, you might be able to do essentially the same thing as a morph target.
