Peter Sharpe has tutorials on making waterfalls with terrains, splashes, and mist/water vapour. His tuts are always good to follow and downloadable in pdf form too (yeah pete! :-). Plus they're linked from the Bryce tuts section of r'osity. Hope this helps - good luck.
