1. There is numerical feedback in the title bar
2. It looks like you bulged eveything when you fumbled. Simply press CRTL-Z to undo. You can undo multiple steps as well.

You must be looking at the old tutorials (for extreme Morph 3D 1.0). The new ones (near the top of the page) are completely illustarated. Since this confused you, I am going to move the XM3D 1.0 help page to another location.

To zoom, click on the Move / Zoom button, click on the view port and the RIGHT click and drag to zoom. You can right click on any interface element to get a complete description as to what it does.
