I'd say place lights in the building where you think they would go, and use those as light sources. As far as cheese, go to www.ditto.com It's a graphics search engine. My first attempt would be to enter cheese into the search engine, find a decent size picture of actual cheese, and use that as your texture map for the cheese. If that's possible.
