Dave, try using the greyscale images from H2 to create that Fendi bottle. That gives you a good idea of what's possible with it. There really isn't anything much to know about them--they work just like a terrain--basically a bump map I guess, but the lattice gives you a double dose of the greyscale--its like a clamshell sort of--when you create the one side, you get the other also.
