Just play around with different filters, grain, add noise, clouds and gausian blur especially, use them in conjuction with themselves, the dodge/burn tools, brushes, and heck anything else in Photoshop and you can create some pretty wild stuff in no time flat. It helps me to visualize the texture I'm trying to create, and break it into its' individual facets (e.g. for wood grain, knotholes, etc..) I'm pretty new to it myself, but the more I learn, the more I realize ther's a filter (or combination) for almost any type of texture imaginable. Play is the key word. if you have a student ID you can buy the ducational pack for around $300 (comes w/imageready if I'm not mistaken) still a pretty steep price, but the benefits outweigh the cost in my opinion.
