Don't know about PC but for MAC OS: Just add your font to the Fonts folder within the System folder on your hard drive.

Same is true on PC's. Just install the font in Windows and it'll be available to all programs that use fonts. I don't know if Carrara requires the fonts to be TrueType or not, but if so, and you've installed a non-TrueType font, it might not show up on the pallette....
