Hello,
i wanted to model a big fat bow to place onto a giftbox or as decoration for a hat.
i use hexagon, but all i can achieve so far is a flat ribbon, i wanted to know whether someone knows a tutorial out there for learning the basics.

You might need to add shadow on the texture? To make it look like it was round?

Spline modeling is what you want for a knot or the like. You can do it with simple polygonal modeling techniques but it's a lot harder. With splines, you basically draw a line that describes the path of the ribbon, and then use something like Sweep to create polygons along that path.

If you have a lat ribbon you should be able to use the thicken command ti give it a little depth. Not sure what it is , but I made ropes from curves in Hex.
