For example, since I' have no interest in animation, would I be able to get rid of the animation tool I keep seeing in screenshots?

You can close the "Animation Controls" palette in several ways (menu, keyboard shortcut, close button).
If you want to start up with it closed, you'll need to close it and make sure that the "Launch Behavior" option is set to "Launch to previous state" on the "Interface" tab of the preferences.

It also never hurts to set at least one "UI dot" for your preferred layout "just in case".

Good.  Thanks.

Also, is it possible to enter a parameter value via keyboard, as apposed to using the dials?  I'm assuming it is, but want to be sure.

Yes.  Click on the number itself, instead of the dial, and it opens a dialogue box for numerical input.

You may also double-click the dial to access the settings panel for that parameter, where you can enter numeric values.

Excellent.  Thank you.
