I am trying to create water puddles ona flat floor. Does anyone have any tips on how to create these models?  Thanks

Create a polyline outline in the vertex modeler and use Construction->Organic

I'm still a little confused about what you're after but here's a thread which might be what you're talking about.

The manual and the in-program error message are wrong about the Organic tool for recent versions of Carrara. It now doesn't work on polylines anymore but on single polygons.

Water color is a result of transparancy, reflection and refraction.  Create a flat plane slightly above your floor. UV map.  Paint a map for your puddle and create an alpha mask. In the puddle area you can add transparancy, reflection and refraction along with bump to get the look of water.
