For something a bit different, why not a contest where the image is a person interacting with some prop (which is supplied to entrants) so for example it might be a person riding a unicycle while taking a selfie. The challenge would be both to create an original pose and create an interesting image using it. And why not include a 2D version which would be challenging in its own way.
