What does Shana Tova U-Metuka mean? And what is the pronounciation? BTW... Happy Rosh Hashanah to you!

It means something like Happy and sweet year Shana = Year Tova = Good U = And Metuka = Sweet ------------- the way I wrote it is the way to pronounce it.
