Ironically, this is, in fact, exactly the technique that is used to generate reflections and refractions in the vast majority of features and professional animation work. Raytracing is almost never used at a professional animation level, and, while the results are acknowledged as not quite matching the quality of raytracing, the savings in render time, along with software techniques that can automatically generate environment maps (reflection maps in P4 terminology), make this a financial necessity for the big production companies.
