Any tips on creating waterfalls would be appreciated

At this point, I can tell you the best looking waterfalls I saw in Vue were actually done in postwork with Photoshop brushes created from photographs. Make a search in Renderosity marketplace to find some or at deviantART (they have a free set if I remember correctly). Or build your own ones, if you can. As for your 100% Vue try, you should test a whiter material on the fall (maybe the milk one or the snow one or a mix). Last, the volumetric cloud (I think) for the bottom is a nice idea. Anyway, this is a very cool attempt !
