The ripples are made using functions. You can find a tutorial on how to do it over on planetside's forums. Search for David Burnetts "Function only landscape." The reason for the ripples orientation is that when the camera is looking down the ripples length you can see the repetative pattern. But actually, as I am writing this I just had an idea that should fix that. Darn.
